Recently, I found myself craving those comforting apple flavors, so I thought, why not bring back the classic recipe—but with a new, modern twist? While scrolling through Pinterest for inspiration, I stumbled upon apple pie cookies. I instantly knew I had to try making these little cookies shaped like mini apple pies! Instead of grating the apples like my mom did, I diced them, giving each cookie that satisfying bite of apple pie texture. The result? A perfectly soft, melt-in-your-mouth cookie that tastes just like a mini apple pie!

Since I’m currently living with my mom and we have a full house these days, I’ve been testing a lot of recipes (and sneaking in photo shoots, too!). When I set these fancy apple pie cookies out on the table, my mom’s eyes lit up. She loved them so much she immediately invited her friends over for tea time. Needless to say, the “golden girls” gave the cookies a glowing review—and asked for the recipe!

What You’ll Need to Make Apple Pie Cookies?

For the dough, gather some butter, vegetable oil, yogurt, powdered sugar, and baking powder. And for that sweet, fragrant filling? Just a mix of diced apples, sugar, cinnamon, and chopped walnuts.

How to make apple pie cookies ?

First, start by cooking the apples. Chop the apples into small cubes. I initially cubed them a bit large, which made them harder to cook, so chopping them smaller is easier. If the apples aren’t softening, you can add a bit of water. In a saucepan, add the apples and sugar, and cook on medium heat until soft. Then, turn off the heat and add cinnamon and walnuts.

In a mixing bowl, add butter and vegetable oil (I used sunflower oil; I don’t recommend olive oil as it adds too much flavor). Add the yogurt, powdered sugar, and baking powder. Mix well with a spatula. Gradually add the flour, about 1/2 cup at a time.

On a floured surface, roll out the dough to about 1/4 cm (1/8 inch) thick. Use a cookie cutter (I used a 7cm (3-inch) cutter) or a glass to cut out circles. Place 1 tablespoon of the apple mixture on half of the circles, then cover each with the remaining circles of dough. Press the edges with a fork to seal, and make a small cross on top.

Ingredients

  • 200gr (1.75 stick ) Butter, soft
  • 1/3cup Vegetable Oil
  • 1/4cup Plain Yogurt
  • 1/3cup Powdered Sugar (if you like more sweet add 1/2 cup)
  • 1/2tsb. Baking Powder
  • 3-3 1/2cup All Purpose Flour

Filling

  • 3 Medium Apples
  • 1/4cup Sugar
  • 1/2cup Walnut, chopped
  • 1 tsb. Cinnamon

    Preheat the oven 180°C (350°F).

    In a mixing bowl, add butter and vegetable oil (I used sunflower oil; I don’t recommend olive oil as it adds too much flavor). Add the yogurt, powdered sugar, and baking powder. Mix well with a spatula.

    Gradually add the flour, about 1/2 cup at a time. First, mix with a spatula, and when it starts to become thick, knead it with your hands.

    On a floured surface, roll out the dough to about 1/4 cm (1/8 inch) thick. Use a cookie cutter (I used a 7cm (3-inch) cutter) or a glass to cut out circles.

    Place 1 tablespoon of the apple mixture on half of the circles, then cover each with the remaining circles of dough. Press the edges with a fork to seal, and make a small cross on top.

    Repeat the same process with the remaining dough. Bake the cookies for 15-20 minutes, until golden brown. Let them cool for 10 minutes before serving, and sprinkle more powdered sugar on top.

    Serve with a cup of black label tea, enjoy!
