Ingredients

  • 2 medium carrots, shredded
  • 1/2c. strained yogurt
  • 1 garlic clove, mashed
  • 1/2t. salt, halved
  • 3T. olive oil
  • 1T. walnut, crushed
  • 1T. pistachio, crushed

Directions

  • 1)

    1. Take a medim pan, it’s better to be non-stick pan. Add 2 tablespoon olive oil and carrots. Cook the carrot until get soft almost 7-8 minutes. Add 1/4t. salt. While cooking always mix with a spoon.

  • 2)

    2. When the carrot got soft, set aside and let it cool.

    3. Take a deep bowl add yogurt, garlic, 1/4t. salt and 1 tablespoon olive oil. Mix well.

    4. Add carrot on to yogurt mixture. Combine well. Taste the salt if it’s not enough add more.

  • 5)

    5. Add walnut and combine.

  • 6)

    6. Serve the carrot dip in small bowls, with pistachio and more olive oil. Enjoy!
