Classic Chicken Salad in 10 Minutes

Chicken salad sandwiches are one of my favorite go-to appetizers and a perfect way to use up leftover roasted chicken. Whenever I roast a chicken, making chicken salad the next day has become my little ritual. Recently, I used some fresh baguettes and turned them into chicken sandwiches, and they were such a hit! So today, I’m excited to share my classic chicken salad recipe with you.

Chicken Salad

This recipe is simple but delicious and one I’ve been making for years. You can find this recipes on countless blogs, but my version has a little twist: I add yogurt to keep it light and fresh. If you’re watching calories, I recommend skipping the mayo and using only strained yogurt for a healthier version. (Check out my strained yogurt recipe if you’re interested!)

What Do You Need for Classic Chicken Salad?

For this classic recipe, you’ll need shredded chicken, lettuce, scallions, mayo, yogurt, and pickles. You can add a pinch of paprika or a bit of mustard if you like a little more kick, but I tend to keep it simple.

How to Serve?

This recipe is incredibly versatile. It’s delicious as a sandwich with classic toasted bread or on crispy sourdough. If you’re using baguettes, try toasting them first and serving the chicken salad on top with a drizzle of olive oil and a sprinkle of chili flakes. A cold beer pairs perfectly with this! You can also toss it with some cooked pasta for a hearty chicken pasta salad.

Easy, fresh appetizer chicken salad recipe.

Ingredients

  • 2 cups Chicken, cooked and shredded
  • 3 Lettuce Leaves, chopped
  • 3 Scallions, chopped
  • 1/2cup Pickles, chopped
  • 1/2 cup Mayonnaise
  • 1/2cup Plain Yogurt
  • Salt and Pepper to taste

Directions

  • 1)

    Take a deep bowl, add chicken, lettuce, scallion and pickles, combine.

    Add mayonnaise and yogurt, and mix well. (If you don’t want to use mayonnaise, you can substitute with strained yogurt. If you’re using strained yogurt, add it first, then add 1/4 cup of plain yogurt and check the texture and taste. Add more plain yogurt if needed.)

  • 3)

    Add salt and pepper, combine well. Serve with toasted baguettes. Enjoy!
