Fresh Herb Omelette : A Delicious Mediterranean Breakfast

Today’s breakfast is herb omelette !!! This recipe is one of my favorite omelette recipe. Especially for summer breakfasts. You know in summer day you don’t wanna eat so much things if you live somewhere hot like me 🙂 That’s why in summer breakfasts I don’t wanna eat except tomatoes and cucumbers. But some days  when I wanna make an egg, I feel like “ Ooo! It’s gonna be heavy ! “ But after I met with this herb omelette recipe everything has changed. Cause in this recipe you don’t even taste the egg 🙂

What herbs go well with eggs?

You can add any herb in it. My favorites fresh parsley and fresh dill. You can also add chives, basil, fresh thyme. 

What can you put inside the herb omelette?

This is a vegetarian recipe so don’t add meat in it. Taste is much better this way. You can add cheddar cheese, red bell pepper, tomatoes or mushroom. 

What can you eat with?

I recommend to eat tomatoes, cucumber, green pepper, arugula with lemon and olives. And of course crispy bread. 

Feta cheese and mozzarella;

These two cheese is gonna give the herb omelette perfect result and taste. Feta cheese is gonna give salt and flavor and mozzarella melt well. 

Don’t use so much egg for recipe, if you wanna rise up the eggs please rise up the herbs. Cause you need to taste herbs and cheese.

Herb Omelette

Herb omelette is a perfect omelette recipe for summer days. With parsley, dill and any herb for the best flavor.

Ingredients

  • 2 Eggs
  • 1/4c. Milk
  • 1/2c. Parsley, chopped
  • 1/2c. Dill, chopped
  • 1/4c. Feta cheese
  • 1/4c. Mozzarella, shredded
  • 1t. Butter
  • 1t. Olive oil
  • Salt to taste

Directions

  • 1)

    Take a deep bowl add eggs, Combine well.

  • 2)

    Add milk and salt, combine.

  • 3)

    Add dill and parsley. Combine.

  • 4)

    Take a pan add butter and olive oil. Melt.

  • 5)

    Add egg mixture. Cook 2 minutes.

  • 6)

    Add feta cheese and mozzarella half of the egg mixture.

  • 7)

    Cover the other half. Cook 1 minutes more.

  • 8)

    Serve with tomatoes, cucumber and green pepper. Enjoy!
