Leek&Cheese Borek : A Vegetarian Miracle

The love for borek extends well beyond Turkey, with its popularity stretching across the Balkans, Greece, and the Mediterranean region. This savory pastry is a cherished staple in many Mediterranean countries.

What exactly is traditional borek made of? 

It starts with handmade phyllo pastry, at home. Of course, for convenience, you can use pre-made phyllo dough, brush it with butter, and fill it with your choice of vegetables. The result? A perfect and satisfying vegetarian dinner recipe.

Prepare the stuff. The leek is gonna give onion taste so if you don’t like sweet taste add salt.

Make a sauce to wet the dough sheets. Take 2 phyllo dough, add 3 tablespoon of yogurt mixture. Brush all over the dough.

Roll the dough just like cinnamon rolls. Cut the boreks dough.

This is a perfect vegetarian dinner.

Ingredients

  • 350gr(12 oz) Phyllo dough- 18 sheet
  • 4 Leeks, chopped
  • 1c. Feta cheese
  • 2T. Olive oil
  • 1/2c. Yogurt
  • 1/4c. Milk
  • 1/4c. Vegetable oil
  • 1 Egg, separated
  • 1/4t. salt
  • 1/4t. Ground pepper
  • 1T. Sesame seed

Directions

  • 1)

    Preheat the oven 180°C (350°F).

  • 2)

    Take a skillet, add olive oil and leek, sauté 4-5 minutes. Add a pinch salt. Leave from fire.

  • 3)

    Add cheese, stir and set aside.

  • 4)

    Take a deep bowl. Add yogurt, milk, vegetable oil, egg white and salt.

  • 5)

    Take 2 phyllo dough, add 3 tablespoon of yogurt mixture. Brush all over the dough.

  • 6)

    Do the process 2 more times. You’ll use 6 phyllo at last.

  • 7)

    Add leek and cheese mixture. Roll the dough just like cinnamon rolls.

  • 8)

    Grease your 20x30cm (8x12inch) baking dish. Transfer your borek dough into the dish.

    Do the process a few more times. Cut the boreks dough 7cm(3,5inch) long.

  • 10)

    Brush the boreks with egg yolks. Sprinkle sesame seed.

  • 11)

    Cook the boreks 30-35 minutes until get golden brown. Enjoy!
