Vegan Fresh Peas Stew

While traditionally enjoyed during the chilly winter months, this hearty stew brings a taste of comfort to any season. Trust me, once you’ve savored the sweetness of your own frozen peas, you’ll never go back to the store-bought ones!

Now, let’s talk about this delectable stew. Picture this: tender peas simmered in a rich, fresh grated tomatoes and baby potatoes. It’s a melody of flavors that dance on your taste buds with every spoonful. And the best part? It’s completely vegan!

What do you need for Peas Stew?

Fresh peas is the most important ingredient. You can use frozen peas but it’s not gonna be the same taste. Baby potatoes, grated tomatoes, tomato past, onion and garlic, and of course virgin olive oil.

Start making fresh peas stew recipe with cooking onions and tomatoes. Saute onion and garlic almost 2-3 minutes, add tomato paste and grated tomatoes. You can use passata instead of grated tomatoes.

In the second step add the fresh peas, baby potatoes, salt, pepper, chili flakes and warm water. Cook until the potatoes and peas get soft, cover with a lid. It takes almost 30 minutes. Check after 20 minutes if your peas are so small they can cook faster.

This vegan fresh peas stew is a perfect dinner recipe for spring days.

Ingredients

  • 3c. Fresh Peas (500gr)
  • 7-8 Baby Potatoes
  • 1 Small Onion
  • 1 Garlic Clove
  • 1 1/2t. Tomato Paste
  • 1/3c. Tomato, grated
  • 5T. Olive oil
  • 2c. Warm Water
  • 1/2t. Chili Flakes
  • Salt and Pepper to taste

Directions

  • 1)

    Take a Dutch pan, add olive oil, heat. Add onion cook 2-3 minutes with stir. Add garlic and cook 1 more minutes.

  • 2)

    Add tomato paste, cook 2 minutes with stir and add grated tomatoes, cook 2 more minutes.

  • 3)

    Add fresh peas, baby potatoes, salt, pepper and chili flakes. And add warm water.

  • 4)

    Cover with a lid and cook 10 minutes, until boil, with medium-high heat. Than cook 20 minutes with low heat. Check the peas and potatoes. When they’re soft it’s cooked.

  • 5)

    Serve with rice or tzatziki. Enjoy!
