My first encounter with Skordalia was in the bustling streets of Athens. Intrigued by its presence in local eateries, I embarked on a mission to recreate this iconic dish at home. After scouring through various recipes, I stumbled upon one from a charming Greek YouTube channel – and let me tell you, it was love at first bite.

This Greek delight is a perfect mezze for fish dishes and souvlaki.

Ingredients

  • 4 Large Potatoes, peeled
  • 3 Garlic Cloves
  • 1/4c. Lemon Juice
  • 3T. Olive Oil + more to serve
  • Salt to taste
  • Pinch of pepper
  • 1/4c. Parsley, chopped
  • 1lt (4cups) Water

Directions

  • 1)

    Take a deep pot, add peeled and roughly chopped potatoes. Add water and 1teaspoon salt, boil until get soft.

  • 2)

    Use a food processor, add garlic, olive oil, lemon juice, pinch of salt and pepper. Mix well.

  • 3)

    Drain the potatoes when it got soft.

  • 4)

    Take a medium deep bowl, add potatoes and mash.

  • 5)

    Add garlic lemon mixture and combine well. In this moment check the taste and add more salt if needed.

  • 6)

    Serve in a serving bowl and add parsley on top. If you want you can add chopped red onion. Enjoy!
