Fall is here, and with it comes all the cozy flavors we love! Today, I’m beyond excited to share with you my very own twist on a classic recipe – Phyllo Pumpkin Rolls. Inspired by the traditional Turkish pumpkin borek, this sweet pastry has a delightful balance of crispy layers and a soft, spiced pumpkin filling that will have you reaching for seconds (and maybe even thirds!).

Traditionally, this dish is made with yufka dough and raw pumpkin, but I decided to shake things up a bit. Instead, I’m using store-bought phyllo dough for an extra crispy texture and cooking the pumpkin to create a smooth, melt-in-your-mouth filling. I’ve also added a sprinkle of cinnamon for that warm, comforting flavor, but feel free to swap it out for pumpkin spice if you’re feeling extra festive!

What You’ll Need for Phyllo Pumpkin Rolls?

  • Fresh pumpkin, grated
  • Sugar (just enough to bring out the sweetness)
  • Ground cinnamon (or pumpkin spice if you’re feeling adventurous)
  • Phyllo dough (thin and crisp when baked)
  • Walnuts, chopped for a bit of crunch
  • Melted butter to brush over the layers

How to make Pumpkin Rolls?

First step is cooking pumpkin, grate the pumpkin, add sugar and cinnamon( or pumpkin spice), sauté 5 minutes. It should be al dente not to soft cause it’s gonna cook in oven.

Grease two sheets of phyllo dough with melted butter.Place 2-3 tablespoons of sautéed pumpkin along one edge of the dough.Sprinkle 1 tablespoon of chopped walnuts over the pumpkin. First, roll the phyllo dough to cover the pumpkin filling.
Then, continue rolling from the edge to form a complete roll. Brush with more melted butter and sprinkle a pinch of sugar on top. Bake in the oven for 20 minutes, 180°C (350°F), or until golden brown.

How to Serve?

Once your phyllo pumpkin rolls come out of the oven, golden and crispy, they’re ready to be enjoyed! These rolls are delicious warm or at room temperature. You can enjoy them with a hot drink or elevate the experience with a dollop of whipped cream or that scoop of ice cream I mentioned earlier. Ingredients

  • 12 Phyllo Sheets
  • 3cup Pumpkin, grated
  • 3tbsp. Sugar + for dusting
  • 1/2tsp. Ground cinnamon
  • 1/4c. Melted Butter( more if needs)
  • 6tbsp. Walnuts, finely chopped

Direction

    Preheat the oven 180°C (350°F).

    Start by grating the pumpkin. In a medium saucepan, add the pumpkin, sugar, and cinnamon. Stir and cook over medium heat for 5 minutes. The pumpkin will be al dente. Set aside to cool.

    Take one sheet of phyllo dough and spread 1 tablespoon of melted butter over it. Place another sheet of phyllo dough on top and spread 1 more tablespoon of melted butter.
