Fall is here, and with it comes all the cozy flavors we love! Today, I’m beyond excited to share with you my very own twist on a classic recipe – Phyllo Pumpkin Rolls. Inspired by the traditional Turkish pumpkin borek, this sweet pastry has a delightful balance of crispy layers and a soft, spiced pumpkin filling that will have you reaching for seconds (and maybe even thirds!).

About recipe;
Traditionally, this dish is made with yufka dough and raw pumpkin, but I decided to shake things up a bit. Instead, I’m using store-bought phyllo dough for an extra crispy texture and cooking the pumpkin to create a smooth, melt-in-your-mouth filling. I’ve also added a sprinkle of cinnamon for that warm, comforting flavor, but feel free to swap it out for pumpkin spice if you’re feeling extra festive!
What I love about these Phyllo Pumpkin Rolls is how easy they are to make. They’re perfect for weekend baking, cozy gatherings, or even just as a special treat for yourself. Pair them with a cup of coffee or tea, or for an extra indulgence, serve them with a scoop of creamy vanilla ice cream on the side. It’s the kind of dessert that makes fall afternoons feel even more magical.

How to make Pumpkin Rolls?
First step is cooking pumpkin, grate the pumpkin, add sugar and cinnamon( or pumpkin spice), sauté 5 minutes. It should be al dente not to soft cause it’s gonna cook in oven.

Then, continue rolling from the edge to form a complete roll. Brush with more melted butter and sprinkle a pinch of sugar on top. Bake in the oven for 20 minutes, 180°C (350°F), or until golden brown.
