What you need to make a sourdough bread?

First of course you need a sourdough starter.  And how can you get it? You can find and buy from internet sellers and you can watch the feeding videos and keep it alive.

Remember you have a new pet and you have to take care with it.

The second way is making your own starter, I get the recipe from The Ultimate Sourdough Starter Guide. It really helped me, this is a great video to make a sourdough starter.

All the other things are flour, water and salt.

Making a good fluffy bread tips;

  1. Warm temperature; the temperature is the most important thing as my experience. You need warm water, you need warm room, you need hot dutch oven.
  2. Using a gram scale; the grams should be the same like the recipe. You can’t add little bit more or less. It make the recipe mess, I know cause I did it 🙁
  3. Hot dutch oven; I watched a lot of recipes and some of them don’t use a dutch oven. But I think it’s really changes the recipe. In the dutch oven the bread raises more. But you should heat the dutch oven almost 1 hour before put the bread. You can also use special dutch ovens for bread, they are much better to not burn your fingers 🙂
  4. Add a cup of water in the oven; this process also helps to not dry the bread. Don’t skip.

Step by step making sourdough bread;

When making a sourdough bread using a gram scale is very important. I used 300gr. all purpose flour, 200gr. whole wheat flour.

You need 30-32°C (85-90°F ) 275gr. warm water.

Mix the flour and water and knead. Cover with a wet fabric or plastic wrap. Rest 30 minutes.

Add 200gr. sourdough starter, knead and rest 30 minutes.

Add 10gr. salt into the 25gr. water. Mix and pour into the dough. Knead the dough. Start to fold the dough in a surface.

Fold the dough almost 10 minutes, it’s gonna be sticky and smooth. Put into the bowl, cover and rest 30 minutes.

After 30 minutes fold the dough like making focaccia. Cover and rest 30 minutes and do the process 4 more time every 30 minutes.

Flour the surface fold the bread and put into the floured basket or a loaf pan like me. I used 20cm(8inches) loaf pan. Cover with a plastic wrap and leave in the fridge overnight.

Next day heat the dutch pan 45-60 minutes 250°C(480°F). Take the dough out and flour a parchment paper. Put the dough. Scratch the dough with a razor blade.

Bake the bread 20 minutes covered with a lid, 20 minutes without a lid. Place a bowl of water in the oven, making sure the bowl is oven-safe. Rest at least 30 minutes before slice.

I hope you can make much better sourdough breads than me and send me the photos. Dig in your sourdough bread to a virgin olive oil, enjoy!
