In my hometown, there’s a brief window every year when we celebrate these vibrant green gems with a recipe we lovingly call “Sultani fries”. All you need is sugar snap peas, corn flour, salt and olive oil. First start making sugar snap peas fry with peeling the edges of the peas. This part is important cause you don’t wanna eat the edges. The edges have a hard texture.


Put in a deep pot and cover with water. It’ should be warm or boiled. Use room temperature water. After boiled the peas you can put in a cold water( in a deep bowl add some water and ice cubes) to keep the green with blanching method. Drain the peas. You don’t need to use paper towel to dry, just be sure it’s not too wet.



Take a deep bowl, add corn flour and salt, if you want you can add a pinch of ground black pepper. Add the sugar snap peas and combine. Take a medium pan and start to fry. Almost 2 minutes each side.
