Mediterranean Delight Chickpea Fritters – 30 Minutes

I recently discovered a new Mediterranean delight: chickpea fritters! I’ve always been a big fan of fritters—zucchini, cauliflower, potato—you name it. If it’s crispy and savory, I’m in. But honestly, I had never thought of using chickpeas as the star of a fritter.

That all changed when I was working on a food photography project for another blog. I tasted a chickpea fritter and immediately fell in love with its texture and flavor. Right then, I knew I had to give it a Mediterranean twist. So I added some of my favorite ingredients—parsley, olive oil, cumin, and a few other goodies—and just like that, Mediterranean chickpea fritters were born!

They may look a bit like falafel, but the texture and flavor are completely different—softer inside, with a hint of herbs and spice.

What Are Chickpea Fritters?

Chickpea fritters are a delicious take on classic vegetable fritters. Usually, fritters are made with grated veggies mixed with eggs, flour, and seasonings, then fried until golden and crispy. This version swaps the grated veggies for mashed chickpeas, making them a bit heartier and full of plant-based protein.

What You’ll Need for Chickpea Fritters?

Here’s what you’ll need to make these tasty fritters:

  • Cooked chickpeas (canned works just fine)
  • Scallions (or spring onions)
  • Garlic
  • Fresh parsley
  • Egg
  • Flour
  • Fresh mint leaves
  • Ground cumin
  • Olive oil
  • Salt & pepper

Optional but lovely: a pinch of chili flakes for a little kick!

How to make the recipe?

In a food processor, blend the chickpeas, parsley, mint, garlic, cumin, salt, pepper, 1 tablespoon of olive oil, and 3 tablespoons of water until smooth.
Transfer the mixture to a large bowl, then add the egg, flour, and chopped scallions. Mix well with a spoon until fully combined.

Using your hands, shape the mixture into 10 medium balls—just like you would when making kofte.
If the mixture feels sticky, wet your hands slightly to make shaping easier.

Heat a skillet over medium heat and add about 2 tablespoons of olive oil.
Cook 3–4 fritters at a time, gently flattening them slightly in the pan. Fry for 2–3 minutes on each side, or until golden brown and crispy. And do the same process for rest.

How to Serve Them?

I’ve served them with a simple tzatziki but also I love serving these fritters with a simple yogurt sauce:
Just mix a few tablespoons of plain yogurt with a grated garlic clove, chopped mint leaves, a drizzle of olive oil, and a pinch of salt. So refreshing!

You can also serve them with tahini sauce, a squeeze of lemon juice, or even a simple green salad on the side for a light and satisfying dinner. These fritters are super versatile—great as a snack, appetizer, or main dish.

Are Chickpea Fritters Vegan or Vegetarian?

These fritters are vegetarian as they include an egg, which helps bind the mixture and makes the texture a bit fluffier. But if you’re vegan, don’t worry! You can easily skip the egg. Just add a little more flour and olive oil to help everything stick together.

I hope you give these Mediterranean chickpea fritters a try. They’re easy to make, packed with flavor, and bring a little sunshine to your plate.
You’ll feel like you’re right by the Mediterranean with every bite!
