What is a classic crepe recipe?

A classic crepe recipe is a thin pancake made with a smooth batter, cooked quickly in a pan until soft and flexible. Unlike thick pancakes, crepes are delicate and perfect for folding or filling.

In Turkish cuisine, this recipe is known as akıtma. It’s a traditional and much-loved breakfast dish that’s been made in homes for generations. Growing up, this was one of those recipes that felt both simple and special at the same time.

How do you eat Turkish akıtma?

One of the best things about this Turkish crepe (akıtma) recipe is how versatile it is.

In Turkey, we usually enjoy it as a savory breakfast. Some of the most popular combinations include:

  • Cream cheese or soft white cheese
  • Fresh tomatoes
  • Avocado slices
  • Olive oil or yogurt-based sauces

This makes it a perfect fit for a Mediterranean-style breakfast—fresh, light, and full of flavor.

Can crepes be sweet?

Absolutely. This homemade crepe recipe works beautifully for sweet options too.

If you prefer something sweet, try:

  • Cream cheese + strawberry jam
  • Honey or molasses
  • Chocolate spread or fresh fruit

One of my personal favorites is cream cheese with strawberry jam—the creamy and sweet combination is just perfect.

You only need a few basic ingredients:

  • Egg

Yes, and that’s one of the reasons I love this recipe so much.

These crepes cook very quickly—usually about 1 minute per side. That means you can have a warm, fresh breakfast ready in minutes.

They’re also great for meal prep. You can make a batch and store them in the fridge, then quickly reheat when needed.
