If you’re looking for a healthy, comforting and budget-friendly vegan soup, this Turkish green lentil soup is one of my all-time favorites. It’s incredibly easy to make, packed with plant-based protein, and perfect for both busy weekdays and cozy evenings.
In Turkish cuisine, lentil dishes are a staple — especially when it comes to vegetarian and vegan recipes. And this soup is more than just a starter. Thanks to its rich texture and high protein content, it can easily be a full, satisfying meal on its own.
If you prefer a thicker consistency, you can simply reduce the amount of water and turn it into a delicious green lentil stew.

What I personally love about this recipe is how nostalgic it feels. I used to eat this soup all the time when I was a child, especially when staying with my aunt. She had a special way of serving it — always with plenty of fresh red onions on the side. It might sound simple, but trust me, that’s the secret touch that takes this soup to the next level!
How to Cook Green Lentils
Cooking green lentils properly is key for the best texture and flavor of green lentil soup.
Like most legumes, green lentils benefit from soaking. Ideally:
- Soak them in water for at least 3 hours
- If you’re short on time, you can soak them in hot water for 1 hour
- However, soaking in cold water gives the best results
For cooking:
- I personally prefer using a Dutch oven or a regular pot, as it allows the flavors to develop slowly
- If you’re in a hurry, a pressure cooker works too
*Tip: If you’re adding orzo (arpa şehriye), don’t cook it from the beginning in a pressure cooker. Add it in the last 10 minutes, since it cooks very quickly.

Is Green Lentil Soup Vegan or Vegetarian?
This recipe is 100% vegan as written. It’s naturally dairy-free, plant-based, and incredibly nutritious — perfect for vegans, vegetarians, and even kids.
In Turkey, there are actually many traditional dishes that are naturally vegan, and this soup is one of the best examples.
If you want to give it a richer flavor, you can add a simple topping:
