Easy Creamy Oven-Baked Potato Salad

Prep time: 10 minutes

Cook time: 25 minutes

When spring arrives, I always find myself craving lighter, fresher meals—especially colorful and vibrant salads. This creamy potato salad has quickly become one of my absolute favorites lately! It’s simple, satisfying, and just a little bit different from the classic versions you might know. The best part? The potatoes are baked in the oven, which gives them a perfectly soft inside with lightly crisped edges. That texture makes all the difference—and when combined with the creamy, tangy dressing, it turns into something truly irresistible.

What makes this potato salad special?

Unlike the usual boiled-potato versions, this one starts by roasting the potatoes in the oven. Roasting brings out their natural sweetness and adds a touch of caramelization that pairs so beautifully with the creamy dressing. Once baked and slightly cooled, they’re tossed with a mix of mayonnaise and yogurt, a splash of lemon juice for brightness, and then combined with sweet corn, crisp cucumber, scallions, and chopped lettuce for extra freshness and crunch.

It’s creamy, a little tangy, and wonderfully refreshing—everything I want in a spring or summer salad!

Ingredients you’ll need:

  • Potatoes (any type that roasts well)
  • Mayonnaise
  • Natural yogurt
  • Lemon juice
  • Sweet corn
  • Scallions
  • Lettuce
  • Cucumber
  • Salt & pepper to taste

You can also play around with the add-ins. Fresh herbs like dill or parsley would be great here, or even a handful of chopped pickles if you like a bit of sharpness.

How to make Creamy Potato Salad?

Slice the potatoes into 0.5 cm (about 0.2 inch) thick rounds.
In a large mixing bowl, toss the potato slices with olive oil, salt, pepper, and a pinch of chili flakes for extra flavor. Mix well, then spread them out evenly on a baking sheet lined with parchment paper.

Bake at 250°C (480°F) for about 20–25 minutes, or until the potatoes are golden brown and crispy on the edges.

While the potatoes are baking, chop all the greens and prepare the sauce.

To make the sauce, in a medium bowl combine, yogurt, mayo and lemon juice. Add a pinch of salt.

After the potatoes are cooked, rest 10 minutes to cool. And combine everything together.

How to serve it?

This salad is super versatile! It goes really well with grilled chicken, meatballs, or even alongside a simple baked white fish. The creamy texture complements protein dishes so well, but it’s also satisfying enough to enjoy on its own as a light meal.

The last time I made it, I served it with a cold beer and pan con tomate—we were in the mood for a casual night of fresh, meze-style bites. It was the perfect combo. You can also pack this salad in a jar and take it with you for a picnic, beach day, or even lunch at work.

Is creamy potato salad vegetarian or vegan?

This creamy potato salad is vegetarian by default. If you’d like to make it vegan, just swap the regular yogurt and mayo with plant-based versions. You can even skip the creamy ingredients entirely and make a Dijon mustard-based dressing instead—just as flavorful, but lighter and tangier.

This is one of those recipes that feels comforting but still light and fresh—perfect for warmer days. I hope you give it a try and love it as much as I do!
