Gozleme is one of the most popular and beloved dishes in Turkish cuisine. It’s a crispy, thin flatbread filled with a variety of ingredients and cooked on a pan. Whether for breakfast, lunch, or a quick snack, gozleme is always a great choice. It’s especially perfect for vegetarians and vegans, depending on the filling you choose!
In Turkey, if you travel by bus, you’ll notice that almost every roadside stopover sells gozleme. That’s because it’s considered a classic travel street food—quick, fresh, and delicious! It’s also a staple in Turkish breakfast restaurants, where you’ll find versions filled with spinach, potato, minced meat, and cheese.
Today, I’m sharing a basic gozleme dough recipe along with four different filling ideas so you can make it at home—perfect for a cozy Sunday breakfast!
About recipe;

What is Gozleme?
The name “Gozleme” comes from the Turkish word “göz,” which means “eye.” The small bubbles that form on the surface of the dough while cooking are called “göz,” and that’s how it got its name—“making eyes” on the dough!
Gozleme is a classic street food and a traditional part of Turkish breakfasts. If you’ve ever been to Turkey, you’ve probably seen elderly women making gozleme on small wooden tables, especially in front of restaurants. This is a common sight in places like Taksim, where they roll out the dough, fill it, and cook it fresh all day long. It’s almost therapeutic to watch them work!

Gozleme Filling Ideas;
1. Cheese Mixture
A classic and flavorful option!
-1 cup feta cheese
-1 cup shredded mozzarella
-½ cup chopped parsley
-Optional: Fresh dill for extra flavor
Just mix everything together, and your filling is ready!
2. Potato Filling
Creamy and satisfying, this is a traditional favorite.
-4 medium potatoes
-1 tablespoon tomato paste
-½ teaspoon chili flakes
-Salt & pepper to taste
How to make it:
Peel and boil the potatoes until soft. Mash or chop them, then mix with tomato paste and spices. Let it cool slightly before using as a filling.
3. Spinach Filling
A light yet flavorful option, especially with feta cheese!
-750g (1.6lb)fresh spinach
-1 medium onion
-3 tablespoons olive oil
-Salt & pepper to taste
-Optional: Feta cheese
How to make it:
Heat the olive oil in a large skillet. Add the chopped onion and sauté until translucent (about 5 minutes). Add the chopped spinach and cook for a few minutes until wilted. Season with salt and pepper. Let it cool, then mix in feta cheese if desired.
4. Minced Meat Filling
A hearty option, especially popular with kids!
-250g(0.5lb) minced meat
-1 medium onion
-2 tablespoons olive oil
-Salt & pepper to taste
How to make it:
Heat olive oil in a saucepan and sauté the chopped onion until soft. Add the minced meat and cook until it absorbs all the liquid. Season with salt and pepper, cook for another 10 minutes, and let it cool.
More Filling Ideas
These are the traditional fillings, but you can get creative! Try using:
Leek and cheese
Sweet potatoes
Roasted eggplant
If it’s your first time making gozleme, I highly recommend starting with potato or spinach fillings—they’re simple and delicious!

Is Gozleme Vegetarian or Vegan?
The gozleme dough itself is vegan, but the filling determines whether it’s vegetarian, vegan, or not.
Vegan: Potato or spinach filling (without cheese)
Vegetarian: Cheese, potato, or spinach filling (with cheese)
Not vegetarian: Minced meat filling
If you’re vegan, just avoid the cheese and meat options, and you’ll have a delicious plant-based meal!
What You Need for Gozleme?
This recipe features a super simple dough—no waiting, no resting. Just knead for at least 5 minutes to get the perfect consistency!
For the dough, you’ll need:
Flour
Water
Olive oil
Salt
For the fillings, just choose one from the list above!

How to make Gozleme?
Start by mixing the wet ingredients, then gradually add the flour. When the dough is no longer sticky, flour the surface and knead it for 5 minutes.

Divide the dough into 8 equal pieces and shape them into balls. Lightly flour the surface before rolling. Before rolling each piece, sprinkle a generous pinch of flour on top and press it down with your hand. To achieve a better round shape, rotate the dough frequently while rolling.

Roll out the dough to about 17-18 cm (7 inches) in diameter. Spread the filling over one half of the dough, then fold the other half over to cover it. Press the edges firmly with your fingers to seal.

Heat a pan—I used a pancake pan for easier cooking. Place the gozleme in the pan and cook for 1 minute. Flip to the other side and cook for another minute. Flip again, and you’ll notice it starting to puff up—let it rise for about 1 minute, then flip once more. In total, each side should be cooked twice. Once done, brush with a little olive oil and serve.
How to Serve;
Traditionally, gozleme is served hot and fresh off the pan. It pairs perfectly with Ayran—a refreshing, salty yogurt drink. If you want to try it, check out my Ayran recipe!
