Carrot cinnamon cake is pure childhood for me. When I was in high school, I studied away from home. Every time I came back for the holidays, my aunt would welcome me with this cake.

My aunt makes the most perfect cakes, and this one has always been my favorite. In fact, I learned so much about baking from her, and many of my cake recipes today are inspired by this very one.

Carrot and cinnamon cake is also such a classic autumn dessert. The moment September arrives, I can almost smell cinnamon in the air—it instantly reminds me of cozy afternoons, warm kitchens, and family gatherings. Do you feel the same?

What you’ll need for carrot cinnamon cake?

This recipe is wonderfully simple and uses basic ingredients you probably already have in your pantry: grated carrots, walnuts, cinnamon, flour, eggs, caster sugar, milk, oil, and baking soda. Just a few steps, and you’ll have a moist, spiced cake that tastes like comfort.

Tips for baking the perfect cake;

Eggs: Make sure they’re fresh and at room temperature.

Leavening: Use baking powder and baking soda together for the best lift.

Oven temperature: Don’t rush the baking. Stick to 160–180°C, with 180°C being ideal.

Whisking: Beat the eggs and sugar together until the mixture turns pale yellow and fluffy, with plenty of bubbles.

How to make it soft and spongy?

This part feels like a family secret: we always use a mixture of olive oil and sunflower oil. It gives the cake a lovely texture and keeps it moist. Another trick is adding a couple of tablespoons of cornstarch and water.
