If you love light and refreshing desserts, this Very Berry Pudding is for you! This recipe came to life when I had way too many berries sitting in my fridge. Instead of letting them go to waste, I decided to turn them into a delicious homemade pudding. My husband and I love fresh pudding recipes, and this one quickly became a favorite in our house! It’s an easy dessert featuring a creamy white pudding and a vibrant, tangy berry sauce.

What do you need for Very Berry Pudding?
For the berry sauce:
- 1 cup fresh berries (raspberries and blueberries, or you can add strawberries!)
- 4 tablespoons sugar
- Zest of 1/2 lemon
For the white pudding:
- 4 cups milk
- 1/3 cup all-purpose flour
- 3 tablespoon cornstarch
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1 tablespoon butter

How to Make Very Berry Pudding?
- Prepare the Berry Sauce: In a small saucepan, combine the berries, sugar, and lemon zest. Cook over medium heat, stirring occasionally, until the berries break down and release their juices. Let it simmer for a few minutes until slightly thickened. Set aside to cool.
- Make the White Pudding: In a separate medium saucepan, whisk together the milk, flour, cornstarch, and sugar until smooth. Place over medium heat and stir continuously until the mixture starts to thicken and comes to a gentle boil.
- Add Flavor & Finish: Once the pudding begins to bubble, lower the heat and stir in the vanilla extract and butter. Continue stirring for another minute until the pudding is silky and thick. Remove from heat. Let it cool 10 minutes.
- Assemble & Serve: Pour the warm white pudding into small jars or dessert cups, and add 1-2 tablespoon berry sauce on each ones top. Let them cool to room temperature, then refrigerate for at least an hour before serving.

This very berry pudding is the perfect balance of creamy and fruity, making it an ideal dessert for any time of the year. I love serving it in small jars—it looks adorable and is easy to grab from the fridge when you’re craving something sweet. My husband enjoyed it so much that he ate two jars right after dinner!
